Italian Baked Chicken and Pastina

So I'm hungry and my mom hasn't cooked (uncool) so I've opted to make dinner. Since I have some orzo chillin in the cuppord, this is what I made for dinner.



Italian Baked Chicken and Orzo
What you need:

  • 1 cup small pasta (I used orzo but pastina works too)
  • 2 ish tablespoons olive oil
  • 1/2 cup cubed chicked breast
  • 1/2 cup diced onion
  • 1 clove garlic, minced
  • 1 cup shredding mozzarella
  • 1/4 cup chopped parsley
  • 1/4 tsp. salt
  • 1/4 tsp. ground black pepper
  • 1/4 cup bread crumbs
  • 1/4 cup grated Parmesan
  • butter
What you'll do:
  1. Preheat oven to 400 degrees
  2. Bring medium pot of salted water to boil. Add pasted and cook till tender. About 5 minutes. Drain pasta into a large mixing bowl.
  3. put olive oil in a medium sized saute pan over medium heat. Add chicken and cook for 3 minutes. Add onions and garlic. Stir until onions are soft and chicken is cooked through.
  4. Put the chicken mixture over the pasta, add mozzarella, parsley, salt and petter. Stir to combine.
  5. place the mixture in a buttered 8x8x2 dish.
  6. In a small bowl, mix bread crumbs and Parmesan cheese. Sprinkle over the top of pasta/chicken mixture.
  7. Dot the top with small bits of butter.
  8. Bake until the top is golden brown, about 30 minutes.
